Thanks!! Going to have a go at these. I only recently realised that cukes aren't "just water" as some people dismissively used to tell us, but that they're nutritionally useful. Duh. And of course. Such an easy way to add an extra veggie, a crunch, a flavour, too.

I used to get bitter thin-skinned little fat things as a kid - we grew them. I like the tiny ones found in small Asian grocers. Bloody love a gherkin / dill. But I never imagined there was any nutritional goodness at all in any of it, till someone recently told me about the vitamin K. So I'm very inspired by this to do some pickling and eat cukes in several different ways. Thanks! And yum!
